BANANA NUT LOAF 
HINT: Keep those over ripe bananas! Freeze them in the peel and store them in the freezer. When you are ready to make this delicious banana loaf just thaw, peel and use.

1 1/2 c. sugar
2 c. self rising flour
1/2 c. shortening or 1/4 cup butter and 1/4 c. shortening (for better flavor)
1 tsp. baking soda
2 eggs
4 tbsp. buttermilk (if powdered buttermilk is used, make sure it is in the liquid form)
3 mashed bananas
1/4 tsp. baking powder
1/2 c. chopped nuts

Heat oven to 350 degrees. Grease and flour 1 large loaf pan or 2 (1 lb.) coffee cans or 3 regular tin cans. Cream sugar, shortening and butter and eggs. Stir in buttermilk and mashed bananas. Sift together baking powder, soda and flour and add to banana mixture. Fold in chopped nuts. Pour batter into selected pans and bake until a pick comes out clean. Usually 60 to 80 minutes, depending on the pans used.
