CHICKEN & STUFFING SCALLOP WITH PIMENTO & MUSHROOM SAUCE | |
1 boned, cooked chicken 1/2 pkg. stuffing mix, (add a little chopped onion & chopped celery for flavor) Put stuffing in pan first, then chicken. Pour the following sauce over and bake. Melt 1/4 cup butter. Add: A dash of salt and pepper 2 c. cooled chicken broth A chicken bouillon cube Cook until thickened. Stir a small amount of hot mixture into 3 slightly beaten eggs. Return to mixture and pour over chicken. Bake at 325 degrees for 45 minutes. Let set 1/2 hour before cutting. MUSHROOM SAUCE: Heat the following until warm and pour over chicken before serving: 2 tbsp. milk 1/2 c. sour cream 2 tbsp. pimento, chopped |
