MICROWAVE PRALINES
4 qt. glass microwave dish
1 c. whipping cream
1 lb. light brown sugar
2 c. pecan halves
2 tbsp. butter, room temperature

Mix brown sugar and cream in a glass bowl and microwave on high for 13 minutes (in an average microwave). Add butter and pecans, stir quickly. Drop in spoonfuls onto foil.

Yield: about 20 large pralines.

Great Southern dessert and easy, too!!

Note: This may take more or less cooking time, depending upon the power of your microwave oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I've made this twice and I must say it is delicious, thought the consistency is different from the recipe that is made on the stovetop. This is creamy and has a good flavor. It is quick and easy, great for late night treats!

A friend from New Orleans gave me this recipe, it makes a HUGE difference if, once you remove it, you whip it with a wooden spoon or a whisk, basically until you're sure your arm is going to fall off - and before you add the nuts. About five minutes. Gives them that soft chewy lightness, rather than a hard, crunchy candy.
