CHICKEN AND BROCCOLI STIR FRY 
1 lb. broccoli, cut up
1 clove garlic, minced
1 lg. onion, cut in 8ths
2 tbsp. oil
2 whole chicken breasts, skinned, boned & cut in strips
1-2 tbsp. oil

SAUCE:

3/4 c. water
1 tbsp. cornstarch
Soy sauce to taste

Heat oil in skillet. Add garlic, cook and remove from pan. Add chicken and cook. When chicken is almost done add some soy sauce. Cook until chicken is finished. Remove. Add oil until hot. Add broccoli and onion, cooking about 4 minutes. Add chicken to broccoli and onion mixture (do not over cook broccoli, it should be crisp).

Add soy sauce, water and cornstarch. Bring to a boil. Stir until it thickens. Serve over rice or noodles.
