LEMON GINGER CHICKEN SALAD 
3/4 c. real mayonnaise
1 tbsp. sugar
1/2 tsp. grated lemon rind
1 tbsp. fresh lemon juice
1/2 tsp. ginger
1/4 tsp. salt
2 c. cooked, cubed chicken
1 c. seedless green or red grapes
1 c. sliced celery

In a large bowl stir together the mayonnaise, sugar, lemon rind, lemon juice, ginger and salt. Add chicken, grapes and celery; toss to coat well. Cover and chill at least 2 hours. If desired, serve in lettuce cups and garnish with toasted almonds.

NOTE: To make this recipe go farther, to serve 6 to 8 instead of 4, I add 1 cup cooked Minute Rice and make half again as much dressing. This recipe makes a wonderful summer dinner when served with fresh fruit and muffins and maybe some fresh green beans.
