NOODLES AND FRESH VEGETABLES 
4 tbsp. butter, divided
1/3 c. onion, sliced
1 clove garlic, minced
1/4 tsp. basil, crushed
1/4 tsp. oregano, crushed
1/4 tsp. salt
1/8 tsp. pepper
1 c. frozen peas, thawed
1 tomato, cored & cut into 8 wedges
2 c. torn spinach leaves
8 oz. med. egg noodles
2 tbsp. grated Parmesan cheese

In large skillet, melt 3 tablespoons butter over medium heat. Add onion, garlic, basil, oregano, salt and pepper. Cook, stirring 5 minutes or until soft. Add peas and tomatoes; cook 3 minutes. Add spinach, cook 1 minute or until slightly wilted. Meanwhile, cook noodles according to package directions. Drian and place in large bowl. Toss with remaining tablespoon of butter. Stir in vegetables and Parmesan cheese. 4 servings.
