CHICKEN BREASTS WITH CHEESE
SAUCE
 
3 or 4 chicken breasts, split
3 or 4 slices bacon, cut in half
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
2 c. milk
1/2 c. grated Parmesan cheese

Arrange chicken skin side up in large broiler-proof dish; top each with 1 piece bacon and bake in preheated 400 degree oven 25 minutes, or until bacon is crisp and chicken is cooked. Spoon off fat.

Melt butter in saucepan and stir in flour and salt until smooth. Gradually stir in milk and cook and stir until mixture thickens. Stir in Parmesan and spoon over chicken. Broil several minutes, or until lightly browned. Makes 4-6 servings.
