APPLE WALNUT COOKIES 
2 c. flour, sifted
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 c. shortening
1 c. brown sugar
1 tsp. baking soda
1 c. applesauce
1 egg (beaten well)

Sift first four ingredients. Cream shortening and brown sugar. Blend soda and applesauce and add to cream mixture. Beat egg well and add to cream mixture. Stir in dry ingredients. Add 1 cup semi-sweet chocolate pieces.

Adjust dough; if too liquid add an extra tablespoon of flour. If too dry add a tablespoon more of applesauce or an extra egg yolk until dough is the consistency of a cookie batter. The reason for this is that different batches of flour will absorb more of less liquid throughout the year according to the humidity in the environment and/or storage conditions and flour quality.

Drop by teaspoonfuls, 2 to 3 inches apart, onto a greased baking sheet.

Bake in preheated oven at 375°F 12-15 minutes.

Makes 4 dozen.
