FANCY CHICKEN CASSEROLE 
1 1/2 lb. plus boneless, skinless chicken breasts
2 1/2 to 3 c. water
1 1/2 tsp. salt
1/2 tsp. curry powder
Chopped onion (as much as desired)
2 stalks celery
1/2 c. butter
2 pkg. Uncle Bens wild rice
1/2 c. sour cream
1/2 c. milk
1 can cream of mushroom soup

Bring chicken, water, onion, celery, salt, and curry powder to a boil. Simmer 1 hour. Remove chicken and discard celery stalks. Remove broth to prepare rice. Add stick of butter, rice, and seasonings then prepare as to box instructions. Dice chicken while rice is simmering. When rice is done mix chicken rice, sour cream, milk and soup together. (I mix in same pan as rice was prepared in.) Bake at 350 degrees for 45 minutes.
