LEMON-ORANGE CAKE 
1 c. sugar
3/4 c. shortening
2 egg whites
1 whole egg
2 c. flour
2 tsp. baking powder
Touch salt
3/4 c. milk
1 tsp. vanilla
Touch orange & lemon rinds, grated

Blend sugar and shortening. Add eggs and whites. Mix alternately the 3 dry ingredients and the milk. Blend well and add vanilla and grated rinds. Have 2 cake pans (round) greased and floured. Pour cake batter in and bake at 350 degrees for 25 or 30 minutes or until a toothpick comes out clean. Cool on racks. When cool, cut the round cakes through the middle and this will give you 4 layers for the filling. Will cut easily if cool and if knife is sharp.

CAKE FILLING:

1 c. sugar
2 tbsp. flour
Touch of salt
1/2 c. lemon juice
1/2 c. orange juice
3/4 c. water
2 egg yolks, slightly beaten

Mix sugar, flour and salt in top of double boiler pan. Add next four ingredients and mix well and cook over hot water until thickened. Put filling between layers and on top.
