OVEN FRIED CHICKEN 
1 broiler-fryer, cut into serving pieces
1/3 c. melted butter
2 tsp. salt
1/4 tsp. pepper
2 c. crushed cornflakes

Dip chicken pieces in melted butter, sprinkle with salt and pepper, then roll in cornflakes. Place skin side up in foil lined pan. Sprinkle with remaining butter and cornflakes.

Bake in moderate oven (375 degrees) about 1 hour or until done. Do not turn during cooking. Variation: Garlic Oven Fried Chicken - Use 2 cups crushed potato chips, sprinkled with 1/4 teaspoon garlic salt for crushed cornflakes.
