CURRIED CHICKEN CASSEROLE 
4 c. cooked rice
2 pkgs. frozen broccoli, cooked
2 whole chickens, stewed, deboned, and chopped into bite size pieces
2 cans cream of chicken soup
1 can mayonnaise
1 tsp. curry powder
1 tbsp. lemon juice
Chicken broth
Cheddar cheese, optional

Grease 9 x 13 pan. Layer cooked rice in bottom. Next layer broccoli over rice. Then layer chicken over broccoli. Finally, mix cream of chicken soup, mayonnaise, curry powder, lemon juice. Add enough chicken broth to give the mixture a gravy type consistency. Spread mixture over layer of chicken. Bake at 350 degrees for 45 minutes. If desired, top with cheddar cheese the last 5 minutes of cooking time.
