BEST OATMEAL COOKIES 
1 1/4 c. butter
3/4 c. brown sugar
1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
3 c. Quaker oats (quick or old fashioned)

Beat together butter and sugars. Then beat in eggs and vanilla. Combine dry ingredients except oatmeal and add to creamed mixture, mixing well. Stir in oatmeal. Chill for 1 hour.

Heat oven to 350 degrees. Drop by rounded teaspoonful onto non-stick baking sheet. Bake 8-9 minutes for a chewy cookie. Cool. Store in a tightly covered container. Makes 4 1/2 dozen.
