1/2 c. butter 3 tbsp. cocoa 1/4 c. sugar 1 tsp. vanilla 1 egg 2 c. graham cracker crumbs 1 c. coconut 1/2 c. chopped nuts 1/4 c. butter 3 tbsp. milk 2 1/2 tbsp. instant vanilla pudding mix 2 c. powdered sugar 1 c. chocolate chips 1 tbsp. butter Chopped nuts Place the 1/2 cup of butter in double boiler; add cocoa, sugar, vanilla and egg. Stir until butter is melted and mixture resembles custard. Combine cracker crumbs, coconut and nuts. Blend into custard mixture. Pat into 7x12 inch buttered pan. Chill; spread with icing. To make icing, cream the butter. Mix milk with the pudding mix, add to butter with the powdered sugar. Spread over bottom layer and chill again. Melt the chocolate chips with the 1 tablespoon of butter, spread over icing, and sprinkle with chopped nuts, if desired. |
