40 CLOVE GARLIC CHICKEN 
2/3 c. olive oil
8 sm. chicken legs & 8 sm. chicken thighs (remove most of skin)
1 stalk celery, chopped
2 c. onions, chopped
1 tsp. tarragon
2 tsp. chopped parsley
1/2 c. dry vermouth
40 cloves garlic, unpeeled
Salt & pepper to taste

Coat chicken with olive oil and brown. Place in casserole and add rest of ingredients. Cook well covered for 1 - 1 1/2 hours at 375 degrees.
