TABITHA'S COLLARD GREENS (THE BEST!) | |
1 1/2 pkgs. collard greens 1/2 bag fresh spinach 1/2 bag or 1/2 mustard greens 1/2 kelp greens 1 tbsp. lemon juice salt and pepper, to taste 2 garlic cloves, chopped (or 1 tsp. minced garlic) 1 jalapeno pepper, chopped 1/2 onion, chopped 4 bacon slices, cut into pieces 1/2 pkg. hot links (or other link types, your choice) 1/2 pkg. smoked polish sausage reserved ham skin (if available - optional) Note: May use other green types, to taste. I sometimes use 1/2 turnip greens as well. When cooking a ham I save some skin (with fat) specifically for this recipe. Fill a big pot half way up with water. Turn heat to medium. Next add all greens, lemon juice, salt and pepper. Use your spatula of choice and stir in and smush lightly down the greens in the water. Keep adding greens till water is really taken up by the leafs. In separate pan grill garlic, jalapeno, and onion together. When lightly grilled add to greens in pot, stir in. Cook bacon, links, sausage and/or ham (all meat of your choice). When cooked add to greens in pot, stir in. Cook greens till all leafs looked kinda shrivelly, you know - done looking. Then turn off heat. Scoop all ingredients into a serving bowl, and serve for the family to enjoy a real southern dish. Enjoy!!! Submitted by: TABITHA HOLDEN |
