NEW POTATOES IN LEMON PARSLEY
SAUCE
 
4 new potatoes, about 1/2 lb.
Boiling water
1 tbsp. sweet unsalted butter
1/2 tsp. grated lemon peel
1 tbsp. lemon juice
1 tbsp. chopped parsley

Cook potatoes in boiling water for 15 to 20 minutes or until tender. Drain and peel. Melt butter in saucepan over medium heat. Mix in lemon peel, lemon juice and parsley. Add potatoes and cook over medium heat, turning frequently, until hot and coated with butter. Makes 2 servings.
