BROCCOLI CHEESE WHIZ CASSEROLE 
2 (10 oz.) boxes frozen chopped broccoli
1/2 cup chopped onion
2 oz. butter
2 tbsp. flour
1/2 cup water
1 (8 oz.) jar Cheese Whiz
3 eggs
Cracker crumbs

Preheat oven to 425°F.

Cook broccoli, drain and set aside. Melt butter; sauté onions. Add flour and water (stirring), remove from heat. Add Cheese Whiz and broccoli. Stir until cheese and broccoli are well blended. Add salt and pepper to taste. Put in 8 x 8 inch to 9 x 9 inch pan.

Beat eggs, fold into broccoli slowly.

Sprinkle with cracker crumbs and dot with butter.

Bake in preheated oven for 45 minutes.

Hi Sherree,

Yes, you can use fresh broccoli, be sure not to overcook it. The frozen pkgs. are about 10 oz. each, so that would be about 1 1/4 lbs of broccoli, you might need a bit more if it requires trimming.

This would serve about 3-4 people as a side, depending upon how much they like their broccoli :)

Love this recipe. I make this too but I usually keep it on the heat when I add the Cheese Whiz, broccoli and eggs and just stir it constantly until mixed and then I bake for 30 minutes at 350°F. I usually use breadcrumbs but will like to try it with the cracker crumbs. That sounds good.
