ONE BOWL CARROT CAKE 
3 c. flour
1 3/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/4 c. vegetable oil
3 eggs
1 tsp. baking soda
2/3 c. buttermilk
1 tsp. vanilla extract
1 can crushed pineapple in juice
1 c. chopped pecans or walnuts
1/2 c. golden raisins
2 c. grated carrots

Preheat oven to 350 degrees. Grease and flour 10" tube pan. Sift together flour, sugar, baking powder, cinnamon and salt. Add oil, eggs, baking soda mixed into the buttermilk and vanilla. Mix low speed 1 minute. Beat at normal speed 3 minutes more. Add the pineapple and juice, nuts, raisins and carrots into the batter. Pour into pan. Bake 1 hour 30 minutes. Serves 16.
