TOP NOTCH ENCHILADAS | |
12 tortillas 1 lb. ground beef 2 cans enchilada sauce 1/2 chopped onion 1/2 chopped green pepper 1 chopped tomato 1 pkg. any shredded Mexican cheese 2 cups rice 2 cups water Olive oil Sauté onion, pepper, and tomato in olive oil until tender. Add ground beef, enchilada sauce, rice and water. Cook on medium heat until rice and meat are done (meat is n longer pink). Preheat oven to 350°F. Line a 9-by-13 inch cookie sheet with aluminum foil. Place tortillas onto pan. Method 1: Put enchilada mixture into each tortilla and fold tortillas over like a taco. Put remaining sauce on top of tortillas. Top enchiladas with cheese. Bake in oven for 30 to 45 minutes or until cheese melts. Method 2: Place enchilada mixture onto tortillas. Top with another tortilla. Put remaining sauce on top of tortilla with cheese. Bake for 30 to 40 minutes or until cheese melts. Yields 6 to 12 enchiladas. Submitted by: Mary A |
