CARAMEL RICE PUDDING 
2 c. cooked rice
1 1/4 c. milk
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1/2 c. brown sugar
2 eggs
1/4 c. raisins

Take the butter out of refrigerator in advance so that it is soft enough to blend with the other things.

Break the eggs into a large bowl. Add the milk, salt, butter, vanilla and brown sugar. Then beat with a fork until everything is well mixed.

Add the cooked rice and the raisins. Stir everything together gently.

Grease a baking dish and pour in the mixture. Bake in an oven, 325 degrees for 30 minutes. When cool serve either plain or with cream.
