APPLE SPICE COOKIES WITH LEMON
GLAZE
 
1 1/2 c. flour
1 tsp. ginger
3/4 tsp. baking soda
1/4 tsp. salt
1/2 c. unsulfured molasses
1/4 c. sugar
2 tbsp. vegetable oil
2 lg. egg whites
1/2 tsp. vanilla extract
1 1/2 c. oats, uncooked
1 Granny Smith apple, peeled and diced

Preheat oven to 350 degrees. Coat 2 cookie sheets with cooking spray. Combine flour, ginger, soda and salt in bowl. Beat molasses, sugar, oil, egg whites and vanilla until smooth. Beat in dry ingredients just until combined. Stir in oats and apple. Drop batter by teaspoonfuls at least 2 inches apart onto cookie sheets. Bake 10 to 12 minutes until edges are golden brown. Cool.

LEMON GLAZE:

1 c. sugar, sifted
1 tbsp. skim milk
1/4 tsp. grated lemon peel
