LENTILS ITALIENNE | |
1 c. onion, chopped 1 clove garlic, minced 1 (8 oz.) can tomato sauce 1/2 tsp. oregano 1 tbsp. sweet basil 6 c. water 1 lb. lentils, washed 2 tsp. salt 2 c. sm. macaroni, uncooked 2 tbsp. oil Saute onion and garlic in oil until they start to brown. Add tomatoes, tomato sauce, basil, and oregano. Simmer 20 minutes. In the meantime, combine lentils, water and salt in large pot. Bring to boil and simmer about 15 minutes. Combine cooked lentils with tomato mixture and simmer for about 15 minutes. While lentils-tomato mixture is cooking, cook macaroni according to directions on package and drain. Add to cooked lentil mixture. Stir and serve. Parmesan cheese may be sprinkled on top as desired. |
