CHICKEN MANDARIN 
2 chicken breasts, cut into 4 pieces
1/4 c. seasoned flour
2 tbsp. butter
2 tbsp. oil
4 tbsp. lemon juice
1/2 c. orange juice
2 tbsp. honey
1/2 tbsp. soy sauce
1/2 tsp. powdered ginger
1 (11 oz.) can mandarin oranges with juice

Dry chicken pieces, shake in paper bag with seasoned flour to coat. Heat oil in skillet with butter. Brown each piece. Drain oranges and set aside. Mix juice from oranges with lemon juice, honey, soy sauce and ginger. Pour over chicken in skillet. Cover and simmer for 3 minutes or until tender. Add mandarin sections 5-10 minutes before serving. Serve with rice. Makes 4 servings. 360 calories or 460 calories with 1/2 cup rice.
