MEAT FILLING: 
1 tbsp. oil
3/4 lb. ground round or Italian sausage
1/2 c. minced onion
1 garlic clove, minced
2 eggs, slightly beaten
1/4 c. minced parsley
2 tbsp. grated Parmesan cheese
1 tsp. salt

In medium skillet over medium-high heat, in 1 tablespoon oil, cook meat, onion and garlic clove, until meat is well browned; remove from heat and stir in 2 eggs, slightly beaten, 1/4 cup parsley, 2 tablespoons grated Parmesan cheese and 1 teaspoon salt; drain well.
