DUTCH POTATO SOUP 
1 lg. onion, chopped
2 tbsp. oil
3 lg. potatoes, quartered and sliced
Salt to taste
1 c. cottage cheese
1/2-3/4 c. evaporated milk
Bunch of parsley, chopped
McKay's chicken seasoning to taste is also good

Saute onion in oil. Add potatoes and cover with water. Cook until tender. Add milk and cottage cheese. Heat to serve (don't boil). Just before serving, add parsley. Delicious flavor!
