SHORTBREAD 
8 oz. butter
4 oz. caster sugar
8 oz. flour
1 oz. ground rice

Beat butter and sugar until soft, add sifted flour and rice. Press into baking tin (shallow), 11 1/2 x 7 1/2 inches. Price surface with a fork, sprinkle with sugar. Bake in moderate oven until a pale golden brown, approximately 15-20 minutes.
