JADE AND RUBY STIR FRY 
1 whole boneless, skinless chicken breast
1 lb. fresh broccoli
2 tbsp. vegetable oil
1 onion, chunked
1 green pepper, chunked
1 red pepper, chunked
1/2 lb. fresh mushrooms, quartered
1/3 c. stir fry sauce

Cut chicken into 1-inch squares. Cut broccoli into bite-size pieces and peeled stalks into thin slices. Heat oil in wok or large skillet over high heat. Add chicken; stir fry 1 minute. Add broccoli and onion; stir fry 1 minute. Add 2 tablespoons water; cover and cook 2 minutes, stirring once. Add the peppers and mushrooms; stir fry 2 minutes. Add stir fry sauce; cook and stir until chicken and vegetables are coated with sauce. Makes 4 to 6 servings.
