Preheat oven to 375 degrees. Rub any size rib roast with garlic and cooking oil. Season with salt and pepper. Place in hot oven for one hour. Turn off oven. DO NOT open the oven for any reason. You can leave the roast in the oven for several hours. Before serving, turn on oven again to 375 degrees. Cook 40 minutes for medium-rare or 30 minutes for rare. This recipe is great to start early. I've left it as long as 6 hours with fantastic results. Remember, don't open the oven after turning off the heat - this would affect the results!
