QUICHE 
2 stalks celery, chopped
2-3 green onions, chopped
10 pieces bacon, cooked & crumbled
1 lg. yellow squash, sliced thinly
Sm. can mushrooms
1 lg. tomato, sliced thinly
8 oz. mozzarella cheese, grated
8 oz. cheddar cheese, grated
1 tbsp. flour
4 lg. eggs
1 3/4 c. milk
2 tbsp. butter

Saute celery, onion and squash in butter, until clear. Whip egg and milk with salt and pepper. Line deep dish pie shell with squash, onion, celery and mushrooms. Fill with grated cheese. Mix remaining ingredients and pour over vegetables. Lay tomatoes over top. Bake at 400 degrees for 20 minutes. Turn down to 325 degrees and bake 35-40 minutes longer until brown and puffy and knife comes out clean.
