JAM GEMS 
1/3 c. butter
1/2 c. sugar
1 egg, well beaten
2 c. bread flour, sifted twice
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
Jam or jelly, any kind

Cream butter until fluffy. Gradually add sugar alternating with beaten egg and beat well. Add baking powder and salt to flour and sift over first mixture, stir alternating with milk. Stir until batter is smooth. Bake at 375 degrees for 7 minutes. Pull pan to front of the oven do not remove. Spoon a teaspoon of jam into center of each muffin. Finish baking for about 13 more minutes.
