APRICOT BREAD 
1 c. snipped dried apricots
2 c. warm water
1 c. sugar
2 tbsp. butter, softened
1 egg
3/4 c. orange juice
2 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
3/4 c. chopped nuts

Soak apricots for 30 minutes in warm water. Meanwhile, in a mixing bowl, cream sugar, butter and egg. Stir in orange juice. Combine baking powder, soda, flour, and salt. Stir into creamed mixture just until combined. Drain apricots well. Add to batter with nuts.

Bake in greased loaf pan at 350 for 50 - 55 minutes. Cool 10 minutes. Remove from pan.
