BRIE SOUP 
2 c. chicken broth
1/2 c. onion, chopped
1/2 c. celery, sliced
1/2 a wheel brie cheese
2 c. milk or 1 c. milk & 1 c. light or heavy cream
3 tbsp. butter

Saute onion and celery in butter; add broth and cut-up cheese. Not necessary to remove the white outside skin. Remove from stove, put in food processor and puree. Return to pan and add milk and/or cream. Heat through. Garnish with fresh chives.
