CORNMEAL PANCAKES 
1 egg, beaten
1 1/2 c. buttermilk or sour milk
3 tbsp. melted butter
1 c. sifted flour
1 tsp. sugar
1 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. cornmeal

Beat eggs. Add buttermilk and butter. Sift flour, salt, sugar, baking powder and soda. Add cornmeal then liquids. Stir just until moistened. Cook on greased griddle using 1/4 cup measure for pouring.

To sour milk: For each cup wanted, put 1 1/2 tablespoons vinegar or lemon juice in 1 cup of milk.
