ZUCCHINI BREAD 
3 eggs
3/4 cup oil
2 cups sugar
2 cups zucchini, shredded
1 cup chopped nuts
3 teaspoons vanilla
3 cups flour (wheat flour optional)
1 teaspoon salt
1 teaspoon baking soda
3 teaspoon cinnamon
1/4 teaspoon baking powder

Beat eggs until light. Add oil, zucchini and vanilla. Sift flour and dry ingredients into egg mixture. Add nuts.

Bake at 300°F for 40 to 45 minutes. Slice when cooled.
