CILANTRO CORN SALAD 
2 tbsp. salad oil
2 tbsp. white wine vinegar
1 tbsp. chopped fresh cilantro or 1 tsp. dried cilantro leaves
1/2 tsp. sugar
1/4 tsp. salt
1 (11 oz.) can corn with red & green peppers, drained
Fresh cilantro for garnish

Mix first 6 ingredients. Garnish with cilantro. Makes 4 servings.

I didn't use the green chili because I didn't have any. I also didn't use low sodium, but I did drain and rinse the beans and corn before dumping them in the bowl. I used about 1/4 to 1/3 cup of Spice Exchange's MANGO GINGER HABANERO grilling and glazing SAUCE (comes in a bottle from Henry's) instead of the Trader Joe's cilantro salad dressing and added about 1-2 tbsp. fresh chopped cilantro leaves. I used 5-6 splashes of original Cholula sauce instead of Tabasco and added no pepper. I also added the juice of 1/2 of a lime.
