COCONUT-TOPPED MIXED FRUIT 
1 sm. orange
1 c. honeydew balls
1 med. bananas, peeled and sliced
1 tbsp. lemon juice
1/2 tsp. almond extract
1 tbsp. plus 1 tsp. shredded coconut, toasted

Over medium bowl to catch juice, remove skin and membrane from orange and section orange into bowl. Add melon balls, banana slices, lemon juice, and extract; toss gently to combine. Divide into 4 dessert dishes; sprinkle each portion with 1/4 of toasted coconut. Makes 4 servings, about 1/2 cup each.
