JOE'S POTATO SALAD 
4 lg. potatoes
1 med. onion
2 stalks celery
2 hard-cooked eggs
3 tbsp. sweet relish
3 tbsp. sour cream
1 tbsp. yellow prepared mustard
1/2 c. mayonnaise
Black pepper to taste

Cook, then peel potatoes. Dice potatoes into 1/2 inch cubes. Finely dice onions and celery. Dice eggs into 1/4 inch cubes. Combine all ingredients and chill thoroughly. Serve on bed of lettuce, garnish with sprig of parsley and light dusting of paprika.
