CHICKEN ENCHILADAS | |
2 cans green enchilada sauce 1/3 c. chopped onion 2 c. shredded cheese 1/4 tsp. salt 1 or 2 cans chopped green chilies 1/2 c. sour cream 2 c. cooked shredded chicken 1 can chicken enchilada sauce 12 flour tortillas Pour 1 cup green enchilada sauce in bottom of pan. Mix together onion, cheese, salt, chilies, sour cream and chicken. Add chicken enchilada sauce. Roll mix into tortillas and place in baking dish. Pour remaining sauce over tortillas. Bake at 350°F until bubbly - about 30 minutes. Can be frozen. Makes 12 servings. |
