CURRY CHICKEN 
1 stick butter
2-3 c. cooked chicken, cut up and save broth
1 med. onion, chopped
1 (13 oz.) can undiluted evaporated milk
1 sm. box frozen broccoli, cooked and cut up in bite size pieces
1 sm. can drained mushrooms
1 tsp. curry powder
1/4 c. flour

Saute onion in butter. Add flour and stir then add evaporated milk; stir. Add curry powder and mushrooms. To this add 1/2 cup chicken broth and cooks until bubbly. If mixture is too thick add another 1/2 cup of chicken broth. In baking dish, place cut up chicken and broccoli. Pour mixture over this and top with slices of American cheese. Place in 350 degree preheated oven until cheese melts and mixture bubbles. Remove from oven and serve.
