NO PEEK SIRLOIN ROAST 
3 lb. sirloin beef roast
1 stick butter
Salt & pepper
1 lg. onion, cut in strips
1 lg. green pepper, cut in strips

Melt butter in Dutch oven over medium heat. Salt and pepper roast and place in Dutch oven. Add onion and green peppers. Cover with lid. Lower heat to simmer. Simmer for 3 hours without lifting lid. Lift meat out onto latter; slice thin and pour onion, green peppers and juice over meat and serve.
