PEANUT BUTTER COOKIES 
1 c. shortening
1 c. granulated sugar
1 c. brown sugar
2 eggs or egg substitutes
1 tsp. vanilla
1 (18 oz.) super chunk peanut butter
3 c. sifted all-purpose flour
2 tsp. baking soda
1/4 tsp. salt

Thoroughly cream shortening, sugars, eggs and vanilla. Stir in peanut butter. Sift dry ingredients and stir into creamed mixture. Drop rounded teaspoonfuls on ungreased cookie sheet. Press down with back of floured fork to make criss cross pattern. Bake in moderate oven at 350 degrees for about 10 minutes. Makes about 5 dozen.
