MINESTRONE SOUP 
3 diced bacon slices
1/2 c. chopped onion
1 crushed lg. garlic clove
2 1/2 c. (two 10 1/2 oz. cans) beef consomme
1 1/2 c. water
1 c. Great Northern beans & liquid
6 oz. can tomato paste
2 tbsp. chopped fresh parsley
1/2 tsp. dried oregano leaves
1/2 tsp. dried basil
1/4 tsp. pepper
1 c. sliced zucchini
1/2 c. sm. macaroni
1 c. frozen mixed vegetables
1/2 c. grated Parmesan cheese

Saute bacon in large saucepan or Dutch oven; add onion and garlic. Saute until onion is clear. Add consomme, water, beans and liquid, tomato paste, parsley, oregano, basil and pepper. Boil gently 10 minutes.

Add zucchini, macaroni and vegetables. Heat to boiling, stirring to break up vegetables. Reduce heat; boil gently 8 to 10 minutes or until vegetables and macaroni are tender. Serve with cheese. About 8 cups.
