BOURBON BALLS | |
2 c. vanilla wafer crumbs 2 tbsp. cocoa 1 1/2 c. confectioners' sugar, divided 1 c. pecans, very finely chopped 2 tbsp. white corn syrup 1/4 c. bourbon Mix well the vanilla wafer crumbs, cocoa, 1 cup of confectioners' sugar and pecans. Add corn syrup and bourbon. Mix well. Shape into 1" balls and roll in remaining confectioners' sugar. Put in a tightly covered tin box, or other metal container for at least 4 or 5 days before serving. Re-roll in confectioners' sugar as needed. For Rum Balls, substitute 1/4 cup rum for the bourbon. Makes 36 to 42 balls. |
