MINT ICED TEA 
6 tsp. tea
A few sprigs mint
1 qt. boiling water
Mint and lemon for garnishing
Juice of a large lemon
Sugar syrup to taste
Cracked ice

Over tea and mint, pour boiling water. Let it steep 3-5 minutes. Strain; add lemon juice and sweeten to taste with sugar syrup. Pour into tall glasses 2/3 full of cracked ice. Garnish with lemon slices and sprigs of mint.

Sugar Syrup: Into a saucepan put 1 1/4 cups sugar and 3/4 cup water. Bring to boil, stirring until sugar is dissolved, and then boil 5 minutes. Cool and store in refrigerator, ready for use.
