MOLDED CANTALOUPE CREAM 
1 pkg. orange Jello
3/4 c. cold water
1 lg. cantaloupe
1/2 c. sugar
1 c. whipping cream
1 3/4 c. orange juice
2 pkgs. Knox gelatin
1 c. boiling water
1/4 tsp. ginger

Make 1 cup of balls and scoop out remaining pieces for the rest of salad. Mix orange Jello with ginger. Add boiling water and dissolve. Add cool water and cool until syrupy. Add cantaloupe balls and put in 2 quart mold. Chill.

Soften gelatin in 3/4 cup orange juice. Heat over low heat along with sugar until gelatin is dissolved. Add remaining orange juice and cantaloupe pieces. Place in blender and blend until smooth. Cool until syrupy. Whip cream until stiff. Fold into cantaloupe mixture. Pour over orange layer in mold. Chill several hours or overnight. Unmold before serving.
