SPINACH, CABBAGE AND WALNUT
SALAD
 
1 lg. bunch fresh spinach
3 c. shredded green cabbage
1 c. bean sprouts
1 sm. red onion, halved, thinly sliced
1 c. walnut pieces
Creamy Garlic Dressing

Wash spinach well and remove stems. Tear into bite size pieces and toss with cabbage, sprouts, onion and walnuts. Pour Creamy Garlic Dressing over and toss well. Serves 6.

CREAM GARLIC DRESSING:

4 tbsp. corn or safflower oil
3 tbsp. mayonnaise
2 tbsp. apple cider vinegar
2 tbsp. soy sauce
2 lg. cloves garlic, pressed

My mom has been making this salad since I was a kid. It, and particularly the dressing, is phenomenal, one of the best salads I've ever had. I like to play around with the dressing sometimes, using rice wine vinegar and part sesame oil for a more asian flair. You can also cut back on the fats, if desired.
