ZUCCHINI CAKE | |
2 c. plain flour 1 tsp. salt 2 c. sugar 4 eggs 3 c. peeled, grated zucchini 1 tsp. baking soda 1 1/2 c. cooking oil 1 1/2 tsp. vanilla 1/2 c. chopped pecans No. 1. Combine dry ingredients. No. 2. Combine eggs, cooking oil and vanilla. No. 3. Mix and add to dry ingredients. No. 4. Add zucchini and nuts. Bake at 350 degrees in a 13 x 9 inch sheet pan for 40 to 45 minutes. Let cool and frost with cream cheese frosting. CREAM CHEESE FROSTING: 18 oz. pkg. cream cheese 1 (1 lb.) box powdered sugar 1/2 stick butter 1 tsp. vanilla Beat cream cheese and butter until smooth. Add powdered sugar and mix well. Add vanilla and beat until smooth. |
