BEET SLAW 
2 cans whole beet,drained and shredded
1 scallion, thinly sliced
1/4 cup golden raisins
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 1/2 tablespoons sherry vinegar
1 1/2 tablespoons orange marmalade

In a large bowl gently combine all ingredients.
