FROSTED OATMEAL REFRIGERATOR
COOKIES
 
1 c. butter
1 c. brown sugar, firmly packed
1 c. white sugar
2 eggs
1 tsp. vanilla
1 1/2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
3 c. quick cooking oatmeal
1/2 c. chopped nuts

Cream butter and sugar. Add eggs and blend well. Add the vanilla. Sift together the flour, soda and salt. Add to mixture. Add the uncooked oatmeal and nuts last.

Shape the dough into a roll, wrap in wax paper and chill overnight in the refrigerator. Slice and bake on a cookie sheet in a moderately hot oven, 375 degrees for about 10 minutes. When the cookies have cooled, spread the tops with cinnamon coffee frosting. Yields: approximately 60 cookies.
